At Rin-Tei, we believe that great flavor is not created by simply adding more seasoning. It comes from understanding ingredients, choosing the right techniques, and giving each ingredient the time it needs to develop its full potential. One of the things we value most at Rin-Tei is how we cook an ingredient, not simply what ingredients we use.

For example, when preparing beef, our goal is to preserve its natural flavor while achieving the tenderness and juiciness we seek. This requires more than simply cooking the meat until it becomes soft. Temperature, time, moisture, texture, and the structure of the meat all need to be considered carefully. That philosophy is also reflected in how we make our sauces.
At Rin-Tei, we harness the natural complexity of fermentation and aging as our essential seasonings. Ingredients such as miso and aged balsamic vinegar can contribute much more than seasoning alone. Fermentation and aging create layers of umami, sweetness, acidity, and aroma, allowing different flavors to work together and create greater depth.

Our special Beef Stew is one example of this philosophy. For the beef, we use a carefully controlled, long low-temperature cooking process. The exact temperature and cooking time are part of our kitchen’s secret, but the process takes many hours and is designed specifically to achieve the balance of tenderness, juiciness, and rich beef flavor we want. The sauce combines a deeply developed demi-glace with carefully selected ingredients, including Saikyo Miso and aged balsamic vinegar. Rather than making the sauce simply heavier or richer, these ingredients help create layers of flavor and a smoother, more balanced finish. This Beef Stew is not simply a dish that represents what we like to cook. It represents how we think about cooking at Rin-Tei.
