Japanese Sake and Food Pairing 12 – Rin-Tei’s signature Beef Pho x Dassai 39
This is the thirteenth pairing introduced by Chef Yasu of Rin-Tei.
One of our most beloved items since opening, the Beef Pho remains a signature that continues to define the Rin-Tei experience. Carefully crafted with time and dedication, the broth is made by slowly simmering oxtail with Rin-Tei’s original blend of spices for over twelve hours. This long, gentle cooking process extracts deep layers of flavor, resulting in a rich yet clean broth that balances depth and clarity.
What makes Rin-Tei’s Beef Pho especially satisfying is the combination of textures and flavors in every bowl. Tender, slow-braised beef adds a comforting richness, while thinly sliced wagyu, finished rare, brings a delicate sweetness and refined umami. Together, these elements create a harmonious balance that highlights Rin-Tei’s approach to layering flavor without overwhelming the palate. Each bite, paired with the aromatic broth, offers warmth and depth that keep guests coming back.
To complement this signature dish, Rin-Tei recommends Dassai 39. This Junmai Daiginjo sake is known for its balanced expression of umami and gentle sweetness, along with a clean and refreshing finish. Rather than competing with the pho’s complexity, Dassai 39 enhances it, bringing out the natural richness of the beef while keeping the overall experience light and refined. With each sip, the sake refreshes the palate, allowing the next spoonful of broth to feel just as vibrant as the first. This seamless interaction between food and sake reflects Rin-Tei’s philosophy of thoughtful pairing. For the best experience, Rin-Tei suggests enjoying Dassai 39 in our traditional wooden masu style, where the wood’s subtle aroma adds another layer of sensory harmony to this comforting and elegant pairing.
