From Farm to Bowl: Haenuki Rice, Freshly Milled at Rin-Tei
At Rin-Tei, rice is not just a side—it is the foundation of our cuisine. That is why we have carefully chosen to serve premium Japanese rice, Haenuki, sourced directly from trusted farmers in Japan.
Haenuki is known for its exceptional balance. Each grain cooks up glossy and slightly firm, with a clean, natural sweetness that enhances rather than overwhelms the flavors of the dish. It holds its shape beautifully, making it ideal not only for traditional Japanese meals but also for Rin-Tei’s Asian-fusion style cuisine. Whether paired with rich, savory dishes or lighter broths, Haenuki delivers a consistent and satisfying bite.
But great rice is not only about the variety—it is also about freshness.
At Rin-Tei, we import brown rice (genmai) and mill it in-house in the Bay Area. By polishing the rice ourselves just before cooking, we preserve its natural aroma, moisture, and flavor. Freshly milled rice has a noticeable difference: a brighter fragrance, a softer texture, and a deeper, more nuanced taste.
Many people don’t realize that rice, like coffee, begins to lose its character soon after milling. That is why we are committed to serving rice at its peak condition.
This dedication—from sourcing directly from farmers to milling in-house—is part of our philosophy at Rin-Tei: to respect each ingredient and bring out its full potential.
We invite you to experience the difference that truly fresh, carefully selected rice can make.
